
My kids hate smoothies. I can't imagine why. They love fruit. They love yogurt. I sweeten them with honey. But, for some unkown reason, they just won't drink them. But, they will eat them off of a popcicle stick.
So, now when I make smoothies I drink my portion. And I still put some in front of the kids. (I can hope.) But, I take the rest and pour it into a popcicle mold. You can find these at kitchen stores. I believe that Tupperware makes some as well. Or, you can use small paper cups and craft sticks. Just fill the cup 2/3 - 3/4 full of smoothie, cover with plastic wrap or foil and insert the stick through the center of the wrap or foil.
And now I have a creamy, fruity "dessert" for a hot summer day.
Smoothie recipe:
1 banana, cut into chunks
1/2-1 cup plain or vanilla yogurt
1-2 cups fresh or frozen berries
honey to taste
crushed ice to desired texture (the more ice, the thicker the smoothie)
Place all ingredients in blender and blend on high until smoothe. Make sure you can always see a spinning vortex in the top of the smoothie. If mixture is too thick, you can thin it with water or fruit juice. Then, either drink immediately or freeze into popcicle molds and freeze until firm.
